The reason they cremate everything is they get the BBQ too hot too quickly and cook any food items too quickly, hence the burnt and raw results
Doing a BBQ is like making love to a beautiful famous actress.
You must take your time, make sure she's ready before placing your meat/veg and don't rush to the finish as you don't have that opportunity for a perfect BBQ again.
