Let's talk about..... Soup!

Another vote for home made soups. I made a lovely Chinese duck, noodle and sweetcorn soup with the carcass of a Peking Duck I roasted for new year's eve.

If I was buying soup, I love this Campbell's one, but I don't think it's available in England?

Make at least one soup a week for the house, always handy to have for lunch or tea if you want something light.

My most requested is a roasted sweet red pepper and tomato soup, I got a big supply of tinned San Marzano tomatoes over Xmas and they lift it to another level, I always sprinkle a bit of feta in the bowl before pouring in the soup and I get asked by wider family members if I can make them a pan of it on a regular basis.

My favourite is a Jerusalem artichoke and black truffle soup with crispy pancetta, and my pumpkin and toasted sweetcorn, pea, mint and ham, and turkey and roast potato chowder get eaten within a day or two of me making them.

Little soup making tip, cook it let it cool blend it and then add your cream, blend it again and reheat it for serving, stops the cream from splitting and always add a knob of butter to any soup you're reheating it gives it a lovely glossy look.
