not a recipe as such, more of a 'serving suggestion'. this is my xmas dinner from a few years back. I'm not a big xmas fan, and always send the borobird home as she fookin loves it. time for me to embrace the man cave mentality, and use up wots in the fridge.

Have you tried just eating the sausages by themselves.. one after the other until you have no sausages left?Got 8 Cumberland sausages and my usual sausage in tomato sauce with pasta or sausage, chips and beans is getting boring

What happens to the sliced red onion in red wine vinegar? Ah I guess that is the pickled onions. Thought you meant ones in a jar. My bad.My North African sausage ācurryā is delicious.
Start with harissa paste (or chopped red chilliās) chopped onions & garlic & chunks of chorizo, sweat down in olive oil then add some white wine. Grill your sausages for a while before cutting in to chunks.
Add sausage chunks, two tins of chopped tomatoes, ras el hanout, some gravy or veg stock, season and simmer for a couple of hours.
Slice a large red onion into a bowl, and cover with red wine vinegar, whilst the casserole is cooking.
When the casserole is reduced to a thickish consistency (thicken if necessary), serve with the pickled onions, loads of freshly chopped coriander, a good Greek yoghurt, and some toasted pitta breads.
