much prefer to par boil then oven.

I do similar, got it totally nailed now for healthy chips:

Chuck 300g of sliced potato's (about 5-8mm thick), in the microwave for 4.5mins, no added water. Then rinse/ wash them to get shot of the starch, dry them in a metal colander in the oven for 2 mins.

Give a baking tray a sprays of oil, brush around, sprinkle some peri peri salt on the tray, spread the dried chips out on top, bit more peri peri salt on top and then bake for 20-25mins, unreal, every time.

You can buy salt n pepper mix, same as you get from Chinese restaurant/takeaways. Got some from Amazon.

Yeah I sometimes mix it up and do saly and pepper ones, like form the chinese with peppers, onions, 5 spice etc, they're class.
Can't get them like how peking garden do, but I'm getting close :)
 
Here is some panacalty I have made in mine. My wife likes cheese and black pepper on the top of it.
