I think on some level maybe, her first digressions got her so much crap that she refused to try and learn and instead tried to double down, then double down again. She is now down some rabbit hole of her own making and to admit she maybe has a lot to learn about trans people before judging them is a huge and humiliating climb for her.

But it's not a defence? What are you supposing happens after the police write up in their report that the rapist is a trans woman?
Think that would be classified as “assault by penetration” in the definitions of the law.Can a woman rape another woman?
