What do you have with your toasted sandwiches? Red/Brown sauce / Mayo / Pickle.....?

Depends what the contents are, but cheese toastie has to contain Branson pickle, and shouldn’t be anywhere near a Mayo dip.

I have had a thing for a toasted cheese sandwich with processed cheese and jalapeños. Usually a midnight snack with a glass of milk.
 
Or cheese and tomato with cheese just right and tomato hotter than the sun. All these scientists fannying about trying to create a fusion reactor should just stick something with high water content in a breville and that would probably do the trick.
 
The greatest sandwich ever made, spread marmite on the toast and throw some mature cheddar over it and melt it. Deliciosa.

Spot on Fella! Mayo only ever acceptable when freshly made, anything out of jar, tube, sachet is truly the devils spunk!
 
Cheese on its own (butter too obvs), but with a splash of lea and perrins inside. Has to be in a proper toastie maker though for the authentic shape and markings and served with a crescent of ready salted crinkle cut crisps

Not a toastie, but toasted. First toast the bread, then put sliced cheese on top, usually cheddar, but gruyère or emmenthal is ok too. Slice tomato thinly and place on top of cheese. Coat tomatos with oil, then sprinkle cayenne pepper, celery salt and oregano on top of tomato. Grill until tomato is almost black.
