Your blade???....

I have 2 kitchen knives that only I use which I keep razor sharp and do regular maintenance on. Then loads of general purpose knives that anyone in the house can use.
The two knives I use for pretty much everything in the kitchen is a Damascus pairing knife and a #2 Cai dao(Chinese Chopper) which was hand forged in Hong Kong(it is stainless steel but I would much prefer high carbon steel) then I have A very good quality diamond sharpening stone in fine and very fine grits.
I really don't need any other knife for cooking as these cover everything in the kitchen, although the Cai Dao isn't for the faint hearted, when first learning to use them they seem awkward but once you learn they are fantastic.

So the all round good egg and snappy dresser that I am offered to get a her a days forging experience for her birthday .
"I think I'd be too scared" says she.

I volunteered as a blacksmith in a museum for a couple of years, it was really good and I actually learned a lot, to the point I could make various practical and decorative items and give demonstrations to people visiting. It was hard and I got a few burns on my arms and a few bumps and bruises from the hammer but yeah it was A good time and a good experience(in fact it's one of a very few things I am actually proud of achieving in my life).

I've got a good mate Nigel, here in NZ, who trained as a blacksmith on a farm near Manfield. He now runs a successful business making automated gates and security systems like that. still does a bit of smithying as well, but more as a hobby these days, but it was working as a blacksmith that he said gave him all the skills and nous he needed to set up the business
